Sup Buntut Goreng (Fried Oxtail Soup)


Bahan:
1 kg buntut sapi
2 ltr air
2 sdt garam
4 siung bawang putih, haluskan
3 cm jahe, memarkan
1/2 sdt lada bubuk
2 batang daun seledri, iris 1/2 cm
bawang goreng
2 sdm mentega


Ingredients:

1 kg Oxtail
2 liter water
2 teaspoon salt
4 clove garlic, refined
3 cm ginger, bruised
1/2 tsp refined pepper
2 stalks celery, cut 1/2 cm
Fried sliced shallots
2 Tsp butter



Bumbu Halus:
10 buah bawang merah
5 siung bawang putih
2 cm jahe

Refined Ingredients:
10 piece shallots
5 clove garlic
2 cm ginger


Kuah :

1 1/2 liter air kaldu daging
2 batang seledri, ikat
250 gram wortel, potong bulat 2 cm
250 gram kentang, potong dadu 2 cm
1 sdt lada bubuk
1/4 sdt pala bubuk
1 sdt garam
2 batang daun bawang, potong 2 cm
2 buah tomat, potong 8


Stock:

1 1/2 beef stock
2 stalks celery, tied
250 gram carrot, cut rounded 2 cm
250 gram potatoes, dice cut 2 cm
1 tsp refined pepper
1/4 tsp refined nutmeg
1 tsp salt
2 stalk green onion, cut 2 cm
2 piece tomatoes, divided 8

Cara memasak:
1.Rebus buntut bersama air, garam, bawang putih, jahe, dan lada dengan api kecil sampai buntut empuk, angkat dan tiriskan.
2.Panaskan mentega, goreng buntut sampai terendam, hingga kecokelatan, angkat dan tiriskan.
3.Panaskan 2 sdm minyak goreng, tumis bumbu yang dihaluskan hingga harum dan matang. Angkat dan sisihkan.
4.Jerang air kaldu daging, masukkan tumisan bumbu, aduk rata, masukkan seledri, wortel, dan kentang, masak sampai sayuran matang.
5.Bubuhi lada, pala, dan garam, aduk rata, didihkan, tambahkan daun bawang dan tomat, aduk rata, angkat.
6.Sajikan buntut goreng dalam mangkuk, tuang kuah sayuran, taburi seledri dan bawang goreng.

Direction:
1.Boil oxtail with water, salt, garlic, ginger and pepper with low heat until oxtail tendered, take it out and let the water out.
2.Melt butter, fried oxtail deeply until brown and take out from butter.
3.Heat 2 tablespoon of oil, fried refined ingredient until tasty smell and welldone, take it out and keep.
4.Heat broth, put fried refined ingredient, stir well, put celery, carrots, and potatoes, cook until welldone.
5.Put pepper, nutmeg and salt, stir well, boiled, add onion leaf and tomatoes, stir well, take away.
6.Prepare fried oxtail into a bowl, pour beef stock, add celery and fried slice shallots, serves hot.
